Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups kefir full-fat or low-fat
  • 1 cup sugar
  • ½ cup butter softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • Optional add-ins: lemon zest chocolate chips, or berries

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • Mix the wet ingredients: In a large bowl, beat together the butter and sugar until fluffy. Add eggs one at a time, mixing after each addition. Stir in the kefir and vanilla extract.
  • Combine dry ingredients: In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  • Mix the batter: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Bake: Pour the batter into the prepared baking dish and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool and serve: Allow the cake to cool completely before slicing. Enjoy as-is or top with frosting, fresh fruit, or a drizzle of glaze.
